Gantry Date Displaying Wrong Date

- I am using the Gantry date plugin on my site and it is displaying the wrong date. I have my wordpress date set for my time zone (central) but the date is still wrong. Do I need to adjust a setting in my rocket theme? Can anyone help me figure this out?
