How do I go about removing the Rocket or Joomla logo from the WWW address bar

Place the favicon.ico in the Joomla root directory and add these lines to rt_head_includes.php (or index.php if you use an old template):
<link href="/favicon.ico" rel="shortcut icon" type="image/x-icon" />
<link rel="shortcut icon" href=" yoursite.com/favicon.ico " type="image/x-icon" />
If you have favicons located elsewhere, delete them.
Still doesn't show up? Clear cache and delete all temporary files and do a refresh in your browser. - Please reply with a direct link to the issue & create a new thread for each new issue.

Just sorted that out by changing the file name for now, I could not find the logo in any of the Joomla files though
I thought I could maybe simply change the graphic file to one of my own without changing code
Is this right?

Which logo are you reffering to?
Btw, If you want the favicon to work in all browsers you really need that code
