Two ways to do it:
A) install the Quantive template and all the extensions to you Affinity site, for that you would use the bundle since Affinity is not a Gantry template. Then move your content around to match the new templates layout.
(Note, in this case, I would create a backup of the current site and make a dev site to do this, after wards, you can move the site.)
Install Quantive with the Rocket Launcher on a dev site, a localhost or a sub directory of your site, and than move your content from the old site to the new dev site.
When you are done, you can move the dev site to your site's root, replacing the old one.

Are the changes saving?
The params.ini" becoming unwrittable is a long standing issues with Joomla.
I really don't have a fix for it, as it's a 'Joomla thing' and not a 'template thing'.
I know it's an annoyance for everyone, but as long as the changes are being saved, we'll all have to put up with changing the permissions.
(BTW some members have has success with keeping the params.ini writable by properly configuring the FTP layer in Global Configuration, a step that is often skipped when setting up Joomla.)

Thanks for the reply Thad, the fact that the changes are saving is the big issue, so I'm glad saving is not a problem.
Honestly, I wasn't trying to give you the brush off with my reply, there are literally hundreds of posts on RT on this issue, and thousand on joomla.org.
I've never quite understood why Joomla hasn't fixed this, probably because once your site is set the way you want, there's no need for the file to be writable, so you just have to put up with it for a short time...
