I'm wondering if its a php issue. The server that my particular install is on is php 5.2.13. I do have another install that's on the newest php version but am reluctant to upgrade it to the vm 2.0.22b in case this is not the issue. Trying to decide whether or not to migrate to the new version or rollback via backup. I will let you know when I decide or make the move.
The account I tested is using PHP 5.3.14 so the PHP version is not the issue.
Dan, I'm working on your request. I've been ill for a few weeks so it's been difficult to keep up with my regular workload let alone several bugs I've been dealing with on several fronts. Nothing out of the ordinary, right?! Anyway, I'll have it done no later than tomorrow.

I may have a solution. I encountered the same issue, and even upgraded to the latest software with no fix.
In digging around Virtuemart's configuration settings, I noticed that there is a Templates tab. In this section, you'll find Shopfront Settings. My settings for the default template and the Category Template were both set to my rockettheme template (rt_graffito). Changing the Category Template to "Use joomla default" fixed my store problems.

A little more info...I still had an error pop up on my shopping cart, and changing the default template for the shop to also be the joomla default fixed the issue, too.
So, to clarify, both the template settings in the Shopfront section need to "use joomla default."
