How do you (re)develop an exisiting live site?

Just wanted to say a big thanks to everyone that helped on this. I learned a lot but my lack of mysql knowledge kept me from designing
this site
offline because, while I could easily make backups of the files and DB to work with offline the DB had troubles importing. When I finally got it to import correctly, I couldn't get the DB and files reconnected. I just ran out of time and needed to get this one 'done'. I ended up simply taking it offline for the weekend and updating it. Internet Exploder 6 doesn't play well with the roklatest news module and some of .pngs in the forum but, as I can tell, everything else looks good in other browsers.
Anyways, I just wanted to say thanks an maybe some others learned something new as I did. It might even be a good primer for when J! 1.5 goes live

- I am going through a similar project of updating my current live Joomla site with a new RocketThmeme template. Can I create a live sub domain with my host server and install Joomla/rockettheme template there and then when the site is ready I can modify the config file to point to this sub domain site.

I am also going through a redevelopment of a site. I started this site when I really didn't know anything about websites, joomla, or databases. I still don't know anything to this day but have managed to keep the site up and running and I've picked up helpful hints on Rockettheme over the past couple years. This is a great place!

I have one more question though. I have 1.0.12 installed on my live site and I'm working on a development site that is 1.0.13. It's all on the same server, two directories side by side but different urls and different databases.
Should I upgrade the original site to 1.0.13 before I tranfer files?
