As for Joomla on a Mac, it works fine. But it's a bit of work. You have to download and install MySQL and edit the htconfig file to get PHP working. Those are both straightforward but somewhat of a pain. Also, the default installation has to be tweaked to allow .htaccess files. So it's not really worth setting up search engine friendly URL's. But on a development server that's not really important. Or you can download MAMP, and drop it in your applications folder and use that complete Apache/MySQL/PHP installation, which does allow .htaccess out of the box.
I'm actually running both simultaneously, the MAMP with PHP 5 and Apache 2, to get comfortable. My default installation looks pretty much like Dreamhost, the company I host with.
Instead of right click, use the control key, or just click and hold for a second to bring up the contextual menu.
However the lack of a split click pad sucks. It is one of the few things that Apple really does wrong. They finally put out a right-clickable mouse but it took years after the capacity was built into the OS.
